Shrimp & Grits

serves 4

Ingredients:

  • Grits

    • 2 cups chicken broth or water

    • 2 cups milk

    • 2 tablespoons butter

    • ½ teaspoon salt

    • ¼ teaspoon pepper

    • ¾ cup grits

    • 2 cups extra sharp shredded cheddar cheese

  • Shrimp

    • 2 pounds 21/25 peeled and deveined shrimp, marinated in

    • 5 ounces Flavour De La Baye Spicy Herb Vinaigrette

    • 3 tablespoons olive or canola oil

    • 4 garlic cloves, crushed and minced

    • 1 teaspoon seafood seasoning

    • ½ teaspoon smoked paprika

    • ½ teaspoon cajun seasoning

    • ¼ cup sliced green onions

Directions:

Grits

  1. In a large saucepan, bring the broth or water, milk, butter, salt and pepper to a boil.

  2. Slowly stir in grits, and reduce heat. Cover and cook for about 15 minutes or until thickened, stirring occasionally. Stir in cheese until melted.

  3. Keep warm until needed

Shrimp

  1. Marinate shrimp in Flavour De La Baye Spicy Herb Vinaigrette for at least 30 minutes.

  2. Remove shrimp from marinade, drain well in a colander.

  3. In a large skillet, heat oil on medium, saute the shrimp, garlic and seasonings until the shrimp turns pink and is firm. (Be careful not to overcook or shrimp will be tough).

  4. Serve over grits and garnish with green onions
