Bacon Cheddar Waffle

serves 4 to 6

Ingredients:

  • Waffle

    • ½ cup sharp cheddar

    • 4 slices uncured turkey bacon

    • 2 eggs

    • 1 ¾ cup buttermilk

    • 2 cup flour

    • ¼ teaspoon salt

    • ½ teaspoon fresh black pepper

    • 1 tablespoon Flavour De La Baye Premium Herb Blend

    • 1 tablespoon sugar

    • 3 teaspoon baking powder

    • 1 cup maple syrup

  • Mixed Berries

    • 1 pint blueberries

    • 1 pint blackberries

    • 1 pint raspberries

    • whipped cream (optional)

  • Scrambled Eggs with Vegetables

    • 1 ½ tablespoons unsalted butter

    • 12 eggs

    • 2 tablespoons milk or water

    • 1 teaspoon kosher salt

    • ¼ teaspoon freshly ground black pepper

    • ¼ cup thinly sliced medium red onion

    • ½ cup diced red pepper

    • 2 teaspoons Flavour De La Baye Premium Herb Blend

    • 5-ounce bag of prewashed baby spinach

Directions:

Waffle

  1. Turn on the waffle iron to get it hot.

  2. In a large batter bowl, measure out the flour, baking powder, sugar, black pepper and salt, stirring well to combine ingredients.

  3. In another bowl, separate egg whites from yolk. Set yoke aside and beat egg whites until they form stiff peaks.

  4. To the egg yolks, add the buttermilk. Beat until well-combined.

  5. Pour the buttermilk mixture into the dry ingredients and stir until well combined.

  6. Add in the cheese, bacon, and Flavour De La Baye Premium Herb Blend. Stir to combine.

  7. Slowly add the egg whites to the batter. Be careful not to deflate the egg whites.

  8. Using a spoon, push ¼ of the batter onto your waffle iron plates and bake until the waffle is done or the iron timer goes off.

Note: Waffle irons vary. Follow the instructions carefully to achieve the best results.

Scrambled Eggs with Vegetables

  1. In a large nonstick skillet, over medium heat, melt the butter. Saute the onion and peppers until softened.

  2. Add the Flavour De La Baye Premium Herb Blend.

  3. Meanwhile, in a large bowl, whisk together the eggs, the milk or water, the salt, and the pepper. Pour the mixture into the pan and cook, stirring occasionally, to desired doneness, 4 to 5 minutes.

  4. Just before the eggs are set, stir in the spinach. Continue to scramble the eggs for an extra minute or two, being careful not to make them dry and hard.

  5. Using a spatula, pick up the scrambled eggs and carefully lay on top of the prepared waffles.

  6. Serve with maple syrup and a dish of mixed berries and optional whipped cream.
